Caleo From Tuscany to Sicily going through Abruzzo and Puglia: this is Caleo. A journey in Central and Southern Italy, to explore the different landscapes from East to West, seizing the uniqueness and diversity of each area. Each wine of this line is made from native grapes that express, in the bottle, all the terroir of the places of origin.
Salice Salentino DOC
  • GRAPES: Negro Amaro with the possible addition of Malvasia nera di Brindisi and/or Malvasia nera di Lecce up to a maximum of 20%

  • PRODUCTION AREA: Apulia Regiomn, the areas of Salice Salentino, Veglie, Guagnano and Campi Salentina in the province of Lecce and San Pancrazio Salentino, Sandonaci and Cellino San Marco in the province of Brindisi
  • CLIMATE: The climate is warm and temperate, with significant rainfall all year round. During the summer the African winds cause rapid and marked rise of the thermometer and high temperature variation

  • More or less intense ruby red in colour, colour with possible orange reflections
  • Pleasant and intense odor; dry, full, robust, velvety
  • Warm and harmonious flavour
  • Recommended with roasted and red meat. Excellent with aged cheese
VINIFICATION:

The harvested and destemmed grapes have been vinified with 7/8 days of maceration in order to extract colour and structure. The alcoholic and malolactic fermentation are made in stainless steel tanks at a controlled temperature 25/27 °C
